Eingetropftes & Käsereis 🇦🇹

Two quick and tasty additions to clear soups

Austria and surrounding countries tend to start (not only) Sunday lunches with soups. In most cases these are clear soups, based on chicken or beef broth, alternatively a vegetarian vegetable broth. The basic broth is then enhanced with various Suppeneinlagen, i.e. added dumplings and similar. Best known of these are Grießknödel (semolina dumplings) and Leberknödel (liver dumplings). Often pancakes are also used, then you get Frittatensuppe (the recipe for the Frittatensuppe also describes how to prepare a beef broth).

In this article we present two lesser known Austrian Suppeneinlagen, Eingetropftes (literally: what has been dripped in) and Käsereis (literally: cheese rice). Both are easy to make and enhance any clear broth of your choice.

Suitable for: Both versions are halal. Both are vegetarian and kosher (if served in vegetable broth) but not vegan. They contain eggs, lactose, glutene, but no nuts, soy nor shellfish.

⌚ 3 min preparation, 5 min cooking (if broth has been prepared before). For Käsereis additional 30 min resting time.

Ingredients 🛒 (for 1 L of pre-prepared clear broth)

– for Eingetropftes: 1 egg, 1-2 tbsp flour, 1 tbsp milk, pinch of salt and pepper

– for Käsereis: 1 egg, 2 tbsp finely grated hard cheese, 1-2 tbsp breadcrumbs, pinch of salt and pepper

– optional in both cases: 2 tbsp finely chopped parsley and/or chives

How to 🍳

For Eingetropftes whisk all ingredients except flour. Add 1 tbsp flour. You need a smooth runny dough, but if it is too runny (can happen if using a very large egg), add a little bit more flour.

For Käsereis first whisk the egg, then add cheese, salt and pepper. Add breadcrumbs, stirring with a spoon. In this case you need a very thick dough. Leave 30 min to rest.

Heat your broth. When boiling, turn the heat down. If making with Eingetropftes, pour the dough through a colander with spaced holes into the soup. If making with Käsereis, push the dough through a grater (back side up). Cook 2-3 minutes. Ifusing parsley and/or chives, add now. Turn the heat off and enjoy!
