
Lokum is known in English speaking countries as Turkish delight, and it comes in many varieties.
Some variants of lokum can easily be prepared at home, and for winter season my favourite is this narlı lokum, pomegranate Turkish delight. It needs few ingredients and is super easy to make!

Suitable for: Narlı lokum is halal and kosher, vegetarian and vegan. It contains no nuts, lactose, glutene, soy nor shellfish.

⌚ 30 min preparation plus overnight cooling

Ingredients 🛒 (for 36 small pieces)
2 big pomegranates, 3 heaped tbsp cornstarch, 1 sachet vanilla sugar, 1/2 glass (100 ml) caster dugar, ca.1/2 glass coconut flakes
Optional: 50 ml rose water, juice of half a lemon

How to 🍳
Press the pomegranates. You should end up with a glass (200 ml) of pomegranate juice. If more, discard the excess. If not enough, add some lemon juice to end up with a full glass.
Prepare a container to cool the lokum later. I used a 15 cm times 15 cm plastic box, so you need a container with flat ground and 200-250 square centimeters (ca. 35 square inches) area. Sprinkle with coconut flakes.
Pour the juice into a small pot, add the sugar and cornstarch (and, if using, rose water). Heat on moderate flame, stirring continuously, until it thickens (ca. 15 min).
Pour into the container with coconut flakes, even out the top, sprinkle with some more coconut flakes. Leave overnight in fridge to settle. Cut into small cubes and enjoy.


Note. Since this is a homemade lokum without additives, keep in fridge and eat in the following 2-3 days
