This is a traditional soup in central and western Anatolia, mostly prepared on festive occasions, for special guests, or for family meals during the fasting month of Ramadan. It is kind’a special, but not hard to make! You get a spicy chicken soup with, hm, dumplings. But the dumplings are outside and cold, you put them on your spoon, grab some soup and swallow – no chewing allowed 😁


Suitable for: This is halal and kosher, but not vegetarian. It contains glutene, but doesn’t contain eggs, nuts, soy nor shellfish.

Ingredients 🛒 (4 servings)
For the ‘dumplings’: 1.5 glass flour, 3.5 glass water, 0.5 tsp salt
For the broth: 0.5 chicken or equivalent amount of chicken pieces, 2 Lwater, 2 bay leaves, 1 carrots, 1 tsp salt
For the final soup: 4-5 tbsp butter, 5–6 tbsp flour, 2 tsp tomato paste, 2tsp pepper paste, 0.5 lemon, and according to taste salt, pepper, chili flakes
How to 🍳
1. Prepare the dough first. Put 1.5 glass of water to boil with a little salt. In a bowl, whisk flour into a glass of water. Slowly pour this into boiling water, constantly stirring. Cook over medium heat, stirring regularly, until it takes the consistency of a pudding. Transfer to a flat plate, flatten to a thickness of half a cm. Place into the refrigerator for a couple of hours to compress.
2. Cook a chicken broth, from chicken, water, salt, bay leaves and carrots.
3. Take the chicken out, remove the skin, tear the meat into pieces.
4. Melt the butter and make a roux with the flour. Add tomato and pepper paste. Stir well. Pour in 1-1.5 L of stock while stirring. Mix well so that there are no lumps. Add the meat, a little salt and pepper and lemon juice. Cook covered for about 15 minutes, over low heat.
5. Meanwhile, cut the pressed dough into diamonds or other shapes as desired. Serve the soup with sliced dough next to it (take a piece of dough in a spoon and grab the soup with it). Enjoy!
